Fridge Clean Out Salad Recipe

We’re going out of town – so we needed to empty the fridge of all our perishables. We made this tasty panzanella / garbage hybrid salad. It was freakin’ delicious. The final photo really doesn’t do it justice.

Recipe:

3 cups day old sourdough, cut into 1/4 inch pieces.

1/4 olive oil

1 T sea salt

Toss bread in oil and salt, place on a sheet tray in the oven at 350 for 20minutes.

1 romaine head

1 avocado

1 cucumber, peeled and seeded

1 pint cherry tomatoes, cut in half

mozzarella cheese, cubed

3 T chopped parsley

3 T chopped basil

1 clove chopped garlic

1/4 balsamic vinegar

2 T maple syrup

Parmesan – The more the merrier.

1/4 olive oil

salt & pepper to taste

Mix everything together and serve on a platter! That’s it, Really!
